PIZZA
Ingredients for the base dough:
- ½ kg of “00” flour
- 12,5 gr of yeast
- A glass of water
- A glass of milk
- 4 spoons of oil
- A full teaspoon of cooking salt
- A teaspoon of sugar
Directions:
Melt the salt, the sugar and the yeast in the warm water and milk. Pour the oil in the centre of the flour and knead with the liquid to obtain a soft and smooth dough. Put the ball of dough in a container, making a cross with a knife on the surface to facilitate the rising; then put the container in a nailon bag and leave it aside to rise for at least 2/3 hours.- B. After the rising, divide the dough in 6/8 equal parts that you will put back in the nailon bag at a certain distance one from the other.
- Take now a ball of dough and on a surface covered with flour, roll it out as thin as you can with a rolling-pin.

- Put the circle of dough on the two close slices and dress with tomato, mozzarella, etc, as you like it.
- When the oven is warm, lift the lid, put your pizza in the oven, opening the two slices and making slide the circle of dough on the baking surface.
- Lower the lid and wait 2/3 minutes.
Useful advice:
- If possible use mozzarella in packet suitable for pizza because it is more solid and less watery; to dose it well use a vegetable mill with large holes.
- To prepare a good tomato sauce strain tinned tomatoes with a vegetable mill with small holes. Add a pinch of oregano and cook for about 30 minutes, then live aside to cool the sauce.
- Mothers! Prepare a healthy and nutritious afternoon snack for you children. Prepare for them some good little pizzas that you can keep in the freezer. When needed you can warm them up in any kind of oven and they will be as if they were still fresh-made..
