Calzone
A “calzone” is basically a crescent-shaped stuffed folded pizza, crimp shut at the edges and baked in the oven. The baking is a little longer than that for a pizza. It can be stuffed to your taste among the ingredients for pizza. Here we propose you the “Neapolitan” version.
Ingredients for the calzone base dough:
- 400gr of flour;
- 30 gr of yeast
- ½ glass of oil
- Water and salt
Prepare the dough as for a pizza and only when it becomes to be well mixed pour on it the oil keeping to knead until the dough is homogeneous.
Neapolitan calzone. Ingredient for two calzoni:
- Base dough for calzone
- Ricotta cheese 230 gr
- Mozzarella cut in little cubes
- Salami or ham steak cut in little cubes 230 gr
- Basil
- Two teaspoons of grated cheese
- A spoon of tomato pulp
- Oil
- Pepper
Directions:
Roll out the dough to form two regular and thin circles. On one half of each circle of dough put the cubes of mozzarella, the ham, the ricotta cheese “crumbled”, sprinkle with the grated cheese, the crumbled basil, the pepper and a drop of oil, trying to leave a little space from the borders. Fold the other half circle and crimp well shut pushing with your fingers. Brush the surface with a little tomato pulp.
Baking:
Put a calzone at a time in your PizzaItaly, controlling the cooking time and moving it quite often. Bake it for about two minutes until the upper part is a little toasted.
