How to make the dough:
The dough to introduce in Demetra is prepared as follows:
Ingredients:
- • 500 gr of remilled durum wheat semolina
- • 250 gr of tepid water
Knead the flour with warm water and leave aside the dough for 15/20 minutes. Then knead it again to obtain a smooth and thick dough.
Put the ball of dough on the work surface covered with a kitchen cloth to protect it from air so that it does not get dried. Take a small piece of dough at time and knead it to obtain a small roll of dough with a diameter of about 1 cm.

How to use it:
Demetra is extremely easy to use. In fact, you need only to:
- take a small piece of dough and knead it to obtain a roll of dough;
- enter the roll of dough in one of the three entrance depending whether you want to make smooth or striped cavatelli, then turn the handle accompanying the roll of dough, that will come out in the form chosen in the under part;
- if you want to make some wonderful orecchiette enter your roll of dough in the smooth entrance and reverse the obtained cavatello with a simple movement, so to obtain the classic orecchietta.
- the cooking time of the pasta so produced varies from 8 to 10 minutes. You will need less time if the pasta is cooked when it is still fresh-made.
